We Wish You A Paleo Christmas – Salads

Christmas Day here in New Zealand conjures up images of beaches, BBQs and backyard cricket with the rellies. Today we’ve got three delicious salad recipes suitable to serve up on Christmas Day (or anytime this summer) which make the most of what’s in season in December, are super simple to make, paleo, and full of flavour. Rocket & Strawberry Summer Salad
Serves 4
Paleo/ Whole30. A delicious fresh tangy salad, with a hint of sweetness. Perfect for Christmas Day, or any BBQ or picnic this summer.

Ingredients
  1. A bag of fresh, washed, rocket leaves
  2. 6 strawberries, quartered
  3. ¼ cup of sliced almonds
  4. 2 tablespoons of lemon juice (meyer lemons are the nicest and most common variety in NZ)
  5. Salt and fresh ground pepper to taste
Instructions
  1. Throw the rocket, strawberries and almonds in a salad bowl. Mix it up, but not too much - you don't want all the goodies on the bottom of the bowl
  2. Whisk the lemon juice, oil, salt and pepper together, and drizzle them over the salad
  3. Serve and enjoy!

Avocado & Asparagus Salad
Serves 4
Paleo / Whole 30 (make sure you check the ingredients of your mustard first!)

Salad
  1. 1 Bunch of asparagus, trim the ends and halve them
  2. 1 Bunnet of cherry tomatoes, cut in half
  3. 1 Ripe avocado, cut in to cubes
  4. 1 Bunch of basil leaves, sliced
Dressing
  1. ¼ cup of olive oil
  2. 2 teaspoons of lemon juice
  3. 2 teaspoons of dijon mustard
Instructions
  1. Steam the bunch of asparagus for 5-7 minutes, until it is tender to the bite
  2. Pop the asparagus, cut up cherry tomatoes, cubed avocado and sliced basil in a large serving bowl
  3. Whisk the olive oil, mustard and lemon juice together and drizzle over the salad
  4. Serve and enjoy!
  5. Sprinkle with salt and pepper as desired

Broccoli & Apple Slaw
Paleo (and without the dressing it is Whole30 compliant). A slaw always goes down well at any meal, but by adding the extra crunch of nuts and sweetness of apples - this recipe will become a favourite at any Christmas Day lunch.

Slaw
  1. A bag of Broccoslaw (Leaderbrand is available at Countdown) or, if you can't find this, then whizz broccoli stalks in your food processor (don't ever throw this part of the vege out, it's got the most nutrients!)
  2. 1 cup of shredded carrot
  3. 1 - 2 apples, finely chopped
  4. 1/3 cup of toasted sunflower seeds
Dressing
  1. 2 teaspoons of dijon mustard
  2. 1 tablespoon of raw honey
  3. 1/3 cup of olive oil
  4. 1/4 cup of balsamic vinegar
Instructions
  1. Combine the Broccoslaw, carrot, apple and sunflower seeds in a bowl
  2. Pop the mustard, honey, olive oil and balsamic vinegar in a jar, shake it up vigorously until it's all combined
  3. Drizzle the dressing over the salad, and toss it to coat all the slaw in the dressing
  4. Serve and enjoy!
Notes
  1. If you like a big of extra zing, add a finely sliced red onion to the mix.
  2. A Whole30 compliant mayo would turn this in to a yummy coleslaw too.
