When hosting (or attending) a BBQ you want quick and easy throw together salads. Our summer berry salad with poppy seed dressing uses fresh seasonal berries that add some extra zing, tasty pecans for a nice crunch, and the dressing really brings out the summer flavours. We made this for a BBQ last weekend and it was the winner of the table, with all the guests going back for seconds (and thirds!).

A salad which makes the most of summer berries! Paleo.

Dressing
  1. 1/4 cup olive oil
  2. 1/4 cup canola oil
  3. 2 1/2 Tbsp red wine vinegar
  4. 2 Tbsp honey
  5. 2 Tbsp coconut sugar
  6. 1 1/2 tsp dijon mustard
  7. 1/4 tsp salt
  8. 2 tsp poppy seeds
Salad
  1. A bag of baby spinach or mesclun salad leaves
  2. 1 1/4 cups pecans, roughly chopped
  3. A punnet of fresh strawberries, sliced (about 2 cups)
  4. 1 punnet of fresh raspberries (about 1 1/2 cups)
  5. 2 medium avocados, diced
For the dressing
  1. Add all the ingredients to a bowl and mix thoroughly
  2. Pour into a jar, and store in the fridge until you are ready to serve.
For the salad
  1. In a large salad bowl or on a platter, toss the spinach or mesclun and then add the pecans, strawberries, raspberries, and avocados.
  2. Drizzle over the dressing and serve!
